Firecracker Meatballs

This is the perfect lightweight dinner and is a great way to mix healthy and tasty food together! This dish consists of baked beans, backed beef meatballs, firecracker sauce (will teach how to make in recipe), and jasmine rice. For this recipe you will need 2 large bowls, a small pot, and a baking sheet. This recipe should take about 10 min to prep, 40 min to make and is about 780 calories.


Tips and Tricks:

Meatballs: Splash a little cold water on your hands before shaping the meatballs. The heat in your hands is what causes the mixture to stick, cooling your hands down will make sure that the beef holds onto itself rather than you.


Meatballs: Make sure that you mix everything through in the meatball mixture you will have to redo all of them if you miss an ingredient or do not mix it together well enough.


Baking: You want to make sure you put the beans and the meatballs on 2 separate baking sheets because you should not have raw meat touching anything.

Rice: You want to use Jasmine rice for this recipe as it is complements the meatballs well with its light and fluffy texture.


Ingredients:

-2 scallions

-1 thumb ginger

-4 TBSP mayonnaise

-4 TBSP sour cream

-4 tsp honey

-4 TBSP soy sauce

-2 tsp sriracha

-1 cup Jasmine Rice

-20 oz Ground Beef

-1/2 Cup Panko Breadcrumbs

-12 ox Green Beans



Instructions:

1)Preheat oven to 425 degrees and wash and dry all produce

2) Trim and thinly slice scallions, separating whites from greens; mince whites. Peel and mice ginger.

3) Ina large bowl, combine mayonnaise, sour cream, honey, and 4 tsp and sriracha. Set aside

4) In small pot, combine rice, 1 1/2 cup water and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 min. Keep covered off heat until ready to serve.

5) While rice cooks, in the second large bowl, combine beef, panko, scallion whites, ginger, remaining soy sauce, sa


lt, and pepper.

6) Form into 20-24 1 1/2 inch meatballs

7) Place meatballs on a lightly oiled baking sheet.

8) Toss green beans on a baking sheet with a drizzle of oil, salt, and pepper.

9) Roast on top rack until meatballs are cooked through and green beans are browned and tender, 14-16 min.

10) Fluff rice with fork, season with salt and pepper. Carefully add meatballs to bowl with sauce; toss to coat.

11) Serve green beans on the side. Garnish with scallion greens.
