Shakshuka

This dish is a perfect breakfast or brunch dish for a family and friends. This dish consists of a smooth and light tomato sauce topped with an assortment of veggies, eggs crack on top and served with a slice of bread (optional but highly suggested).


Shakshuka is a staple dish in Israel and has grown from many cultural influences. It was a popular Middle Eastern and North African dish that could possibly date back all the way to the Ottoman Empire. It is most found in Libya and Tunisia.


Many people also change up the recipe to fit their desires as this dish is very simple and you can experiment with it all you want. Some people like to add bacon bits, sausage, or various other vegies. This is a great dish to experiment with and add in all your families likings.



Ingredients:

- 2 TBSP olive oil

- 1 medium onion diced

- 1 red bell pepper seeded and diced

- 4 garlic cloves, finely chopped

- 2 tsp cumin

- ¼ tsp chili powder

- 1 28-oz can whole chili tomato sauce

- 6 large eggs

- Salt and pepper

- 1 small bunch cilantro chopped

- 1 small bunch fresh parsley


Instructions:

1.) Heat olive oil in a large sauté pan on medium heat and add chopped onion and bell peppers and cook until translucent.

2.) Add in some garlic, chili, salt, and pepper for taste and let I cook for another minute

3.) Pour in the can on tomatoes into the pan and bring it to a simmer while breaking it apart in a smooth sauce.

4.) Using a large spoon, create wells in the sauce and crack the eggs into each well. Cover and let it cook for 5-8 minutes, or until the eggs are done to your likings.

5.) Garnish with chopped cilantro and parsley.

6.) I also like to add some avocado on top for a creamy taste.

7.) Enjoy with some bread on the side!
