Sherry Mushroom Crostini

THIS SHERRY MUSHROOM CROSTIT IS THE MOST AMAZING FOOD IN THE WHOLE WORLD!!!!!


This is can be served as an appetizer, daytime snack, or even a midnight snack (yeah, its that good!). These mushroom crostini's are a great thing to make for a dinner party as they are delicious and very easy to make!


For this recipe you will need French baguette, mushrooms, onions, garlic, parsley, arugula and most importantly: sherry vinegar. Sherry vinegar is a type of vinegar that has a softer flavor than red wine, but a more sweeter flavor than balsamic vinegar. A substitute for sherry could be white wine, but note that it does have a much more strong and acidy flavor to it that will change the flavor of the mushrooms. If you are looking for a non alcoholic substitute, you could use apple cider vinegar since it is more widely available. You want to add the apple cider vinegar gradually and keep tasting it as it is a lot more stronger than sherry vinegar.


For the bread, we would recommend you use a French baguette as it is a great way to serve appetizers to your guests at a dinner party and it gives everyone an easy food to carry around. You can also use sourdough bread, but I would keep note to add a little less salt into the mushroom because sourdough has that sour taste within it.


Ingredients:

-Olive Oil (just enough to fill the pan)

- 1/2 pound shiitake mushrooms (chopped thinly)

- 1/4th of a red onion (finely chop)

- 2 garlic cloves thinly sliced

- 1/4 cup sherry vinegar (look above for substitutes)

- 2 tbsp fresh lemon juice

- 1 tbsp finely chopped parsley

- kosher salt

- pepper

- 1/2 french baguette

- handful of arugula


Instructions:

1) In a large skillet, pour olive oil, and add the shiitake mushrooms and cook over medium heat. Keep stirring until browned (4 min).

2) Add garlic, onions, lemon, salt, pepper, parsley and cook until well combined (2 min). Stir in your sherry vinegar and turn off heat once combined.

3) Chop your bread into slices and add olive oil or butter on one side and place on a grill pan. Once you do that you can place in the oven at about 300 F degrees and let it toast for about 3-4 min.

4) Spoon mushrooms on top and top of with arugula and serve!
