Spicy Shrimp Quesadillas

These spicy shrimp quesadillas are AMAZING! so truth be told, I am not a big fan of quesadillas, but this recipe is amazing! Before I had these quesadillas, I always hated them because they were too cheesy. I am not a big fan of cheese and that is the main reason I despised quesadillas. Once I had this quesadilla, I became obsessed with them.


This recipe is a low cheese recipe so if you are someone who enjoys a lot of cheese in their quesadilla, feel free to put as much as you want. This recipe take 20 min to make and if a very quick and easy meal idea when you have a busy day.


I got this recipe from a close family friend who lives in California. He had taught me how to make these amazing quesadillas along with its condiments on the side. What I highly recommend you buy to go with these quesadillas are Pepperplant sauce and Guac Sauce. The pepperplant sauce us a tangy and spicy Mexican sauce that goes great with any kind of taco and quesadilla. The Guac sauce is a tangy guac sauce and is an easy alternative than having to make fresh guacamole.


Ingredients:

- Shrimp

- Tajin

- Knob of butter

- Flour Tortillas

- 5-6 big mushrooms

- 1 Avocado

- pinch of salt

- half lemon

- 1/4 of red onion

- 1 tomato

- sour cream

- Pepperplant sauce (optional but highly recommend)

- Cheese (any kind you like)


Instructions:

1) Start by taking a medium sized bowl and mixing together butter and shrimp. Make sure that the shrimp is well coated with a layer of butter.

2) Once well combined sprinkle your tajin on top of your shrimp. Put just enough that the shrimp is covered in it. Once you have done that let it sit for about 10 min

3) While the shrimp is marinating, cut up your onions, tomatoes and mushrooms. Cook your mushrooms and add salt for flavoring

4) Take a large pan and cover the surface with butter. Put your shrimp on the pan and let each side cook for about 3-4 min on medium heat. While it is cooking cut up your Avocado and mash it up.

5) In your avocado add lemon and salt for flavor

6) Once your shrimp is done, take it out on a cutting board and cut it into small pieces.

7) Place your tortilla on the pan and heat up both sides for 15 seconds.

8) Place some shrimp, onions, tomatoes, pepperplant sauce, and mushrooms in the middle of the tortilla

9) Sprinkle a little bit of cheese over and fold in half and press down hard against the quesadilla with your spatula.

10) Put the quesadilla on a chopping board and cut into 3 pieces.

11) Place in a plate and eat with your guac and sour cream

12) ENJOY! 😊
